07 Feb'2010

Today is the day of Eugene's baptism at the Church of the Risen Christ.

I guess you can tell who the afternoon-nappers are ... :)

Good boy! He did not cry at all !

Hair's wet. Notice he's looking rather dazed and traumatised.

The 2nd anointment.

Chair Posture 1

This is how Eugene sits on the sofa when watching TV - he sits on the arm-rest.
How did this come about? He followed mommy's style.
Yes, I watch TV by sitting on the arm-rest and resting my feet on the foot-stool - so comfortable.

Change and Change Blogger Backgrounds

As you may have noticed, I regularly change my Blogger backgrounds.

I usually get the pre-made backgrounds from the internet but sometimes I would like to have my own touch in it.

So I've bravely ventured into making my own background.

This black background with the moon at the side is the first blogger background that I've made. I got the picture of the moon and background stars and did it in Adobe Photoshop and saved it as JPG.

If you would like to do it yourself, here's the link to this site that I got the instructions from. But if you're not that IT inclined or too lazy, you can choose one of their pre-made backgrounds.

My Body and Baby

Here's Eugene pointing to his body parts. He has been able to know his body parts since about 2 months ago (16 months old).

Hubby and I, when we see another baby, we will point the baby out to Eugene and say "baby". We did not try to make him say the word or even coach him, just normal conversation.

Then yesterday, while he was looking out of his bedroom window and looking at the playground, he saw a baby and said "baby" loud and clear.

Trendy fashion just for you by "K & J House"

As with any gal, I like to buy clothes and accessories.

I get my kick now by sourcing for the cheapest but fab individual pieces and putting it together.

I came across this stall in Toa Payoh selling hip clothes. Owner Wendy said that her clothing are Korean and Japanese styles but I do find that a lot of her pieces are similar to trendy Urban Outfitters, Anthropologie, Free People, Forever 21.

Of course not all pieces are to my taste, but then taste are very subjective.

Wendy's clothing were so well received that she has opened a shop now.

Spaghetti alla Carbonara (without cream)

I like my spaghetti carbonara without cream. Somehow, when I eat it with cream, my stomach gets bloated.

An Italian friend taught me how to cook it. As he said, the real Italian way is without cream.

Well, I'm not going into a debate about whether it should contain cream or not. I would say, to each his own.

Ingredients (my way)
4 eggs (ya, I know but I wanted more sauce, so I used 4 eggs but 2 eggs should be enough.)
*1 egg yolk (for more creaminess, you can add an additional egg yolk)
bacon
Parmesan cheese
spaghetti (I use Barilla)
salt (I use Malton sea-salt)
ground black pepper
Serves 2

* you have to add egg yolk or the sauce will be too runny

How much sauce you want, how creamy you want, how much salt and pepper you want, etc is all up to your taste.

1 Boil a large pot of water.

2  Saute the bacon and set aside. You can cut it into strips if you want but I like my bacon in bigger chunks.

3  Always cook your pasta in large amount of rapidly boiling water. Add some salt to the water.

I was being taught this way to put the spaghetti into the boiling water.
You hold your spaghetti in a bunch and lightly twist it - put it in the centre of your pot and let go - the spaghetti will drop in a spiral form. The spaghetti will slowly ease itself into the pot neatly when the bottom softens. Don't try to force the spaghetti into the pot or it will break.

Timing is critical. Pasta is always eaten al dente, which means firm to the bite. I feel that it is better to taste for doneness, several times if necessary instead of just relying on the packet's instruction.

4 Break eggs into bowl and beat it. Season with salt and pepper.

5 As soon as the spaghetti is done, drain it quickly and mix it into the egg mixture. The hot spaghetti will cook the egg mixture  but you have to mix it fast or else your egg mixture might turn into omelette.

6 Mix in the bacon and Parmesan cheese.

That's it!  Serve Immediately.

Buon Appetito!

Long Beach Seafood Restaurant @ Dempsey

30 Jan'2010

Another seafood makan. This time at Long Beach Seafood Restaurant at Dempsey Hill.

Impressive building - like a colonial bungalow. You can eat outside or in the restaurant.

Mom-in-law doing the ordering.

What big Alaskan Crabs!

Rather disappointed with the food. Maybe my expectation was too high as this is Long Beach, famous for their seafood.

This time, we had Black Pepper Crabs - the black pepper sauce was buttery and spicy but the crabs' flesh was kind of soft.

We were recommended their Garlic Prawns which they claim is their signature dish - definitely not lip-smacking and again the flesh was soft. Should have ordered the Nestum Prawns instead.

I am not a foodie connoisseur but if the prawns' flesh is soft, it means it's not so fresh right? And was the crabs overdone as the flesh was kinda soft?

Ok, maybe this is just a one-off, I don't know.

The saving grace was this dish called "Dong-Pao Pork-Ribs" - not that "Dong-Pao Pork" that originates from Hangzhou. It comes in individual serving. It was coated with a sauce and it was really soft. Huge piece - my MIL couldn't finish it.

My choice of seafood restaurants - definitely "Red House".

Red House Seafood Restaurant

24 Jan'2010

Hubby's belated Christmas treat for his family. We usually don't buy any presents for hubby's family, preferring to treat them to a nice meal instead.

At Red House Seafood.Waiting for our food.

I had always preferred "Red House Seafood" over the rest of the seafood restaurants at the East Coast  Seafood Centre.

The Black-Pepper crabs and Chilli crabs (dip the  man-tou/buns in the sauce) are absolutely yummy.

We had ordered a plate of fried rice with just eggs (for Eugene) and it was delicious - simple but good.

I've been patronising their restaurant for many years, and they have always maintain their consistent high standard in their food.
